Bacon and Cabbage

Ingredients

4 pounds of Irish Bacon

1 Cabbage, trimmed, quartered, and cored

4 tablespoons unsalted butter

Freshly ground black pepper

Parsley Sauce

Boiled Yukon gold potatoes, for serving

Boil Bacon Joint for 1 Hour

Boil potatoes for 40 mins
Strain the potatoes
Add salt, pepper, 1 knob of unsalted butter, and a splash of milk.
Mash the potatoes until the mixture is lump-free and creamy.

Trim, quarter and core the cabbage, and place in the same pot as the bacon at boiling point for 20 minutes

Prepare the parsley sauce

Strain the bacon and cabbage pot, add to a plate, and add unsalted butter to the bacon and cabbage pile.

Add 2 large dollops of mashed potatoes to each plate.
